THE WINES AT VOLVER VOLVER

We are committed to natural philosophy, to its agriculture, its processes, its winemaking techniques and the quality of the wine.

The process of selecting producers is not simple. The lack of transparency, lack of controls, clear standards and adequate legislation on the labeling of natural wine make this task complex. For this reason, we decided to create — based on our experience and community principles — a series of requirements to participate in the fair.

We are looking for conscious producers who produce their wines in a sustainable and responsible way in all areas. In other words, it is not enough to have a single “natural” label or to cultivate only part of the vineyard organically: the commitment must be comprehensive.

At Volver Volver we feel a great responsibility as a space for information and for the dissemination of natural philosophy. Our mission is to represent only producers who are truly committed to these values. Some wines can be classified as “low-intervention”, but that doesn't necessarily make them natural wines. If we don't make that distinction, we would be allowing importers, restaurants, stores and consumers to distribute and consume them believing that they are. Therefore, we are rigorous in our selection.

Requirements to participate as a producer in Volver Volver:

  1. Vineyards and processes:
    + All vineyards or base fruits must be cultivated in an ecological, organic and/or biodynamic way.
    + If the land has other crops besides grapes, they must also be managed, at least, in an ecological and sustainable way.
    + Fermentations must occur spontaneously (without selected yeasts).
    + Oenological additives (yeasts, enzymes, vitamins, lysozymes...) are not allowed, except sulfites at low levels (maximum 30 mg/L, regardless of the type or color of the wine).
    + The use of sterile filtration, clarification or pasteurization is not allowed
  2. We ask for references within the community. We talk to producers, colleagues and people to help us build an authentic vision of their work.
  3. Whenever possible, we visit the vineyard.
  4. We tried the wines. Our founders are members of the community with vast experience, relationships in the environment and knowledge, with trained and objective palates. This is fundamental to our selection process, since the quality of the crop is directly reflected in the profile of a wine.

We ask all participating wines and producers to transparently declare their working practices, the additives used, the oenological aids and the technologies involved in their processes.

Some producers are under continuous evaluation. If we see that there is a genuine commitment and a clear path to natural philosophy, they can be considered, even if they do not yet meet all the criteria.
